When you run out of your food budget… it’s time to get ‘creative’
It actually happened. I ran out of money in my food budget. Usually I can scrape together a $5 meal and eat it for two days but…I didn’t have $5.
Old me? Pull money out of next month’s budget.
New me? Find something – ANYTHING – to eat. I found a dusty box of chicken fried rice mix. All I needed was chicken. But… I didn’t have chicken.
Instead, I mixed the box contents with ground turkey. It ended up tasting like a weird mix between Mexican and Chinese food so I thought that maybe adding tortillas would somehow force the meal to choose a country – preferably Mexico.
It didn’t.
By this time, the meal had gone so far south, I decided to make garlic bread in hopes the garlic bread would burn off my taste buds and end my suffering.
It didn’t.
Frustrated, I poured myself a tall glass of orange champagne from Weins Winery and tossed the roll of pre-made chocolate chip cookies in the oven.
If you don’t believe I’m trying my best to live like no one else… please tell me the last time you had this combo.
I looked embarrassingly at my husband. I don’t ever remember making a meal this bad before. He smiled, took a huge bite of his ‘Chinese burrito’, and said…
‘I like this hon. We should make this more often.’
I won the husband lottery.

Oh my goodness, that’s hilarious! Here’s a tip next month buy a good amount of fruits and vegetables, they go along way and they’re cheap right now. Also buy chicken every time it’s on sale and individually wrap it in plastic wrap and store it in a ziploc bag in the freezer that way it’s easy to thaw out in a hurry. It’s a good way to insure that you don’t run out of this all important staple. Fill in the gaps with some brown rice bought from the bulk bins and viola’ you have a healthy meal anytime. Mix up the seasonings and you can make it anything you want:) Check out my blog for some yummy, easy recipes!
